Do you ever get excited to cook something, but when you look for a recipe online, you get overwhelmed because there are so many versions of the same dish and you don't know where to start?

[00:00:10]

We do, too. We do, too.

[00:00:11]

Hi there. I'm Deb Perlman, creator and mastermind behind Smitten Kitchen and the author of three cookbooks.

I'm Kenji Lopez-Alt. You might know me from Serious Eats, my books, The Food Lab and The Walk, or my YouTube Cookie Show.

[00:00:23]

We're both professional home cooks, which means that we create and test recipes obsessing over them until they're just right.

[00:00:28]

On our new podcast, The Recipe with Kenji and Dead, we'll share our techniques and ingredients so that you can learn everything you need to create your own perfect recipes.

[00:00:37]

I fundamentally believe that there aren't bad cooks. There are just bad recipes. To me, the best recipe not only has a great outcome, but a great experience. If it's got 22 ingredients and uses four bowls, my hunt for the perfect recipe is not over yet.

[00:00:51]

I, on the other hand, I'm guilty of creating recipes with 22 ingredients and more than four bowls. But for me, recipes are really just the beginning. It's the techniques behind them that help you become a more adaptable cook, whether you're cooking for yourself, your family, or a house full of weekend guests.

[00:01:06]

We certainly have different cooking styles and different opinions on everything from the proper height of a pancake, to the correct stacking order of a taco, to the right way to cut a sandwich.

[00:01:15]

But our goals are the same. Create excellent recipes that empower you, the home cook, to make the most of your time in the kitchen.
